Shoyu chintan ramen or the clear-broth tsukemen
The story behind the bowl
After roughly eighteen months of training at Menya Sho in Tokyo, the owner opened Menya Jun in 2020 and later Soba House Menya Jun. Korean native chicken and freshwater clams meet Japanese tare, charcoal-grilled chicken and house-made noodles in a genuinely Seoul expression of modern chintan.
Before you go: Choose shoyu for the clearest introduction to the stock. Confirm which Menya Jun location and menu you are navigating to; the Soba House format is the guide's intended entry.
