Ben Tham and Gwern Khoo founded A Noodle Story in 2013 after fine-dining experience, then translated Japanese ramen technique into a distinctly Singaporean hawker bowl. Its Bib Gourmand history and Amoy Street setting make it the chapter's clearest bridge between local food culture and ramen craft.
