The original Taiwan ramen
The story behind the bowl
This is the Nagoya original: a compact bowl of chicken broth buried under chili, minced pork, garlic and chives. Its Taiwanese name reflects founder Kuo Ming-yu’s roots, but the fiercely seasoned dish belongs entirely to Nagoya.
Before you go: The original is genuinely hot. Ask about a milder level if needed, and plan it as an evening stop because the Imaike flagship traditionally opens late.
