The story behind the bowl
Hanabi’s invention removes the soup and turns the bowl into a mixing ritual. A raw yolk binds spicy mince, chives, scallion, garlic, nori and fish powder to thick noodles; a small scoop of rice absorbs the remaining sauce.
Before you go: Mix from the bottom until every noodle is coated. Do not skip the complimentary finishing rice.
