The story behind the bowl
A repeated Tabelog Top 100 selection near Kanazawa Station, Taiga layers miso over pork, chicken and dried-seafood stock, adds a bright trace of yuzu and serves ginger juice before the bowl. Its black version gains a dramatic squid-ink depth.
